AMJ's Triple G Upscale Meal

Jammin’ Salmon Burgers (Yield: 4 servings)

Cook: 15 min


For Burgers:

2 teaspoons freshly chopped parsley leaves
½ Vidalia onion, diced
2 eggs
½ cup panko bread crumbs
½ teaspoon cracked black pepper
1 teaspoon kosher salt
1 lemon, zested
4 tablespoons Dill Mayonnaise, recipe follows
2 (6 ½-ounce) cans Alaska skinless and boneless pink salmon, drained well
2 tablespoons grapeseed oil

Dill Mayonnaise:

½ cup mayonnaise
½ lemon, juiced
2 tablespoons freshly chopped dill leaves
Pinch cayenne pepper
½ teaspoon salt
½ teaspoon cracked black pepper


For Burgers:

Preheat oven to 400 degrees F.

In medium bowl, combine, parsley, onions, eggs, panko, black pepper, salt, lemon zest and Dill Mayonnaise together. Add drained salmon and mix well together. Make 4 patties and set aside.

In a large skillet on medium, heat 2 tablespoons of grapeseed oil. Place burgers in skillet. Cook over medium heat until browned. Turn and brown other side. Place in oven for 3 to 4 minutes.

Serve on buns with Dill Mayonnaise.

Dill Mayonnaise:

Combine all the ingredients in a small bowl and set aside


Spicy String Beans with Toasted Almonds
(Yield: 4 servings)

Prep: 10 min
Cook: 10 min


4 tablespoons butter
¼ cup slivered almonds
1 tablespoon minced garlic
1 red jalapeno, sliced into half moons
¾ pound green beans, snipped and blanched
Salt and freshly ground black pepper
Dash fresh lemon juice


In a large saute pan over medium-high heat, add the butter. Cook the butter until browned and nutty, about 1 to 2 minutes. Add the almonds and toast, tossing frequently for about 1 minute. Stir in the garlic and jalapeno, then add the green beans and toss until warmed through. Season the beans with salt and pepper, to taste, and a dash of fresh lemon juice. Transfer to a serving dish and serve.


Big Daddy's Seasoned Wedged Fries
(Yield:10 to 12 servings)

Prep: 30 min
Cook: 20 min


6 russet potatoes, wedged
Peanut oil, to fry
French-fry seasoning, please select from one of the following recipes:

Dry Porcini Seasoning:

1 teaspoon dry porcini mushrooms, ground
1 teaspoon coarse sea salt
½ teaspoon black pepper
⅛ teaspoon dry mustard powder
1 teaspoon Sherry vinegar

Dill Lemon Zest Seasoning:

1 teaspoon freshly chopped dill leaves
1 teaspoon sea salt
½ teaspoon coarse black pepper
1 lemon, zested

Smokey Paprika Seasoning:

1 teaspoon smoked paprika
1 teaspoon freshly chopped parsley leaves
¼ teaspoon garlic powder
¼ teaspoon black pepper


Heat deep-fryer with peanut oil to 350 degrees F.

Fry potatoes in a deep-fryer until golden brown and tender. Approximately 6 minutes. Toss with your choice of seasoning.

For the Dry Porcini Seasoning: Combine all the ingredients in a small bowl and set aside.

For the Dill Lemon Zest Seasoning: Combine all the ingredients in a small bowl and set aside.

For the Smokey Paprika Seasoning: Combine all the ingredients in a small bowl and set aside.
