Super Crispy Tempura Fried Okra with Sweet and Sticky Honey-Scallion Dipping Sauce



Super Crispy Tempura Fried Okra
  

Serves 3-4

Ingredients

1 pound fresh Okra split
1 cup All Purpose Flour
Additional 2 tbsp All Purpose Flour
½ cup Corn Starch
16 oz. cold Seltzer Water
1 tsp Cayenne Pepper
1 tsp Onion Powder
1 tsp Granulated Garlic
2 quarts canola oil

Directions:

Heat oil to 375 degrees.

Mix flour & corn starch together. Gradually add cold seltzer
while whisking until you get a pancake batter like consistency.

Mix spices and 2tbsp flour together and coat split okra in mix.
Add to tempura batter and slowly begin to fish tail okra into hot oil.

Let fry for 2-3 minutes then remove and drained.
Serve with dipping sauce and get crunching!


Spicy Honey Scallion Dipping Sauce

Makes about 1½ cups

1 cup Sour Cream, drained
¼ cup Honey
¼ cup chopped Scallions, white and green parts
1 tsp Cayenne Pepper
Salt and freshly Ground Black Pepper to season

Directions:

In a small bowl, combine the Sour Cream, Honey, and Scallions. Season to taste with Salt and Pepper. Cover and refrigerate for at least 1 hour to chill, or for up to 1 week.
